Speaking of madness, that's exactly what I've been up to in the kitchen since the weekend, getting ready for the Thanksgiving feast (a US thing). Turkey is the main meat and I've got a 14 lb. "organic" thawing in the fridge. For the stuffing, which I'll prepare the morning of the feast I've made sourdough croutons (from wild yeast captured in the Philippine provence of Ilocos Sur back in 2000), and my version of Italian sweet fennel pork sausage (sorry Ian, the Italians can out cook you Brits any day; hands down.) I made my annual batch of pear chutney and tomorrow I tackle the gravy base and make my favorite "wild rice with wheat berries and cranberry salad." If you were here, I'd be happy to feed you all - even Cathy_D; but she'd have to shower first.
P.S. Wheeler - when I use chocolate syrup, I make the real deal. The kind that gets rock hard if you reheat it too often ;)
