However when such hardship exists there will always be bastards who would exploit the worse off and would offer such big monies that they cannot turn it down even if it disgust them to do it because the amount could feed their family for a year or put their children into eduction.

First off Fly, you are used to dealing with the masses, AKA "tourists" not normal people like me, there is a big difference :-)
Cuisine, well 500 national dishes apparently in the Nam and most of them are for shit. In fairness though let's not forget I am of Western taste and spoil, much big meat and poultried plunder for my mouthy buds have I. Here the chickens are fuc*ing annorexic and look like a pepporami stick on a laxative diet and any meat dish is also hacked up and full of bloody splintered bones. Suffice to say if they knew the word "Fillet! and size their meals properly it would be fit for Kings.
Here the locals still tend Rice paddies, Morning glory is a rich thing and favoured as is noodles and Rice, fish sauce not to mention my fave..bloody evil HOT chilly and chilli sauce everywhere!!
Suffice to say I have been in hunger since my arrival. I think I have lost at least 20ibs this Month as a result because it is too hot to eat and their main portions are like my snacks, not a bad thing when you are a fat Photog :-)
I actually found one eatery that actually has "Fish and Chips", I taught them how to make a "Chip butty", the locals were in hysterics wondering why I was shoving loads of French fries and tommy sauce into a piece of Baguette (spell).... Ergo "chip buttie" simple but favoured amongst the English tourist. I told them to put this on their outside menu board to attract Brit tourist.
You can eat Cau Lau or Pho which is a noodle based soup/vegatable meat dish which for about 20,000 dong (1 dollar) is good value if you are thin :-) Me I like my meat. I have eaten everything here which walks or talks. One night recently I had some jar of 1o0% spirit with a dead Gecko lizard in it and some ginseng and other stuff but I was too drunk to give a shit..it ws good I think it must have been I was not arrested or shot? I was drinking with "local" people though ;-)
All I can say is that if I had the money I would fly in some roast Lamb with Mint sauce, Yorkshire puddings and 5000 roast potatoes! with stuffing on the side and Gravy!
Shi* I miss my food, anyway tommorrow I will teach the local eatery about cheesy chips! If I teach about peas pudding and Faggots it would mess their minds up this soon on I think!
Then maybe show them how to kill and Butcher a Cow, Pig or sheep without leaving a mass of splintered bone in the bloody meat!

I get it IAN, your description of local food sounds a lot like my experience when I had roamed around Java and the southern 2/3 of Sumatra when I went visiting Indonesia. Same is true for Malaysia. Hard to get used to local food and feel properly fed.
Why hell I remember it was the same even in ultra developped Japan. After having been there for 33 days I was plain sick of eating fish all the time and never any meat. Do you have any idea of how much a Kobe steak can cost? And in Japan they sell fruit by the "item", one orange, one pear, two apples, and not by the chilo.... After 33 days on a fish diet I was so happy to find a KFC in Tokyo.
I ate one entire bucket! Lucky for me they did not charge me for overweight baggage on my flight back since I had stuffed myself at KFC just before taking off.
And Bai Ling still does not show up. It should be about noon over there in L.A. I wonder if Bai Ling went out to get herself a portion of KFC chicken.
